2 Comments Road Trip Chex Mix
I have very specific things I like to take with me on trips. One must have is my Road Trip Chex Mix. It is full of everything yummy, chocolate, peanut butter, coconut and sugar! I took the original recipe from the Chex box itself, but have modified it a bit. This is a great recipe for all of you moms of Gluten intolerant kids since it is Gluten free!
Alright, here are all of the ingredients necessary to make this delectable little treat.
Ingredients:
8 cups Chocolate Chex (1 box)
1/2 medium bag M&Ms
1 cup sweetened coconut flakes
1 cup light corn syrup
1/2 cup sugar
1 cup chunky peanut butter
16 sandwich Ziploc bags
In a large bowl, mix Chocolate Chex, M&ms, and coconut together. Set aside.
In a medium sauce pan, heat corn syrup and sugar until barely bubbling. (I like to spray the measuring cup with cooking spray so the corn syrup comes out easier)
Measure and add peanut butter. Stir until it is all dissolved. If it isn’t dissolving quickly, just turn the heat on low until it is all incorporated.
Pour syrup mixture over dry Chex mixture. Stir and coat the entire mix with the syrup. Let it cool till warm in the bowl (this is the time to take a spoon full or two to “try it out”, and oh how yummy it is)
Spoon individual serving into Ziploc bags. (These are enough bags for a double batch, I open them and turn down the sides for easier spooning. Then fill 1/3 of the way with Chex Mix. Zip up. Then I put all of them into larger gallon Ziplock bags for easy transport for trips)
This is a must make snack for road trips, camping, trips to the beach or lake. I can never make enough of this stuff to satisfy my kids, husband, family or friends. Don’t be afraid to double the recipe, it stays fresh in the Ziplocs longer than you think.
